Light salmon in color, with reddish gold highlights. The mousse is fine and present, complementing the delicate, fresh and very animating nose of fresh cherries, forrest berries, a sophisticated hint of citrius and a dusting of nutmeg. Dry on the palate, fruit-driven yet still classically cream: like freshly picked wild cherries smothered in whipped cream. The fairly warm acidity is elegantly balanced by an extraordinary minerality that leads to a very harmonious structure.
