Deep straw yellow in color, bright and shining in the glass. The nose runs the gamut from fruity to herby and vegetal: notes of honeyed apple, orange, and pink grapefruit are paired with aromas of acacia blossoms, white spring wildflower and a whiff of Mediterranean brush. The palate is savory, fresh and ever so slightly balsamic: A trail of iodine reverberates through notes of ripe white peach, green apple, orange and lemon. There’s a spiciness that is offset by just the right amount of residual sugar which elevates the sense of fruitiness and keep the lively, long mousse of small, continuous bubbles.
