The third expression from High N’ Wicked’s line of Singular Limited Releases, Saints & Scholars is a single malt Irish whiskey from the personal collection of legendary distiller Noel Sweeney. Sweeney, a 30+ year industry veteran and whiskey icon, distilled this on November 20, 2002 while Master Distiller at the Cooley Distillery in County Louth, Ireland.
Twice distilled in copper pot stills and aged for 18 years in second-fill Heaven Hill, Austin Nichols, and Ancient Age bourbon barrels, this exceptional release is comprised of five barrels, each tasted and hand-picked by Sweeney to showcase the character of the distillate rather than the barrel.
Aromas of warm American breakfast biscuit, star anise, and baked Jonagold apple precede a rich, oily palate brimming with caramelized pineapple, orange blossom honey, and charred cinnamon bark before transitioning to passion fruit, tarragon, and toasted Tellicherry peppercorn on the finish.
