This wine has a subtle, pale gold color with fine, persistent bubbles. It is delicate, with aromas of peach, white flowers, vanilla pod, and brioche on the nose and flavors of fresh fruit and honey on the palate. Excellent as an aperitif or with foods such as seafood and white meat.

SAM SAYS
I love Taittinger. It's a classic house in the Champagne region of France and this is bright and creamy with a little brioche note to it. I love it.

Pale golden color, with a rich, elegant nose that begins with ripe white fruit and moves towards the notes that come from ageing: baked goods, toasted bread and spices. The palate is racy, with a fresh, pleasant texture and long finish with subtle notes of apricot and white peach.

If you don't want to get too crazy on price, Cava is always a fun way to go. The Juve y Camps is one of my go to Canvas and it's only around $22. It's delicious enough to drink by itself all day long, but it's also great if you're looking to make some mimosas or other sparkling-based cocktails because it's not too crazy expensive.

 CHARDONNAY
An alluring perfume of mango and fresh gardenia with whispers of candied citrus rind and spices open onto a round, full palate layered with fresh citrus and some stone fruit flavors. Bright acidity provides structure and a mouthwatering juiciness and the finish has a captivating briny minerality.
CABERNET
Pure, fresh plum, violet, and sage aromas lead to a round palate layered with ripe plum, dark berry, and blackcurrant flavors. Leather, cedar, and dried herb accents, along with whispers of vanilla and oak provide depth, while lithe acidity keeps the wine lifted, balanced, and bright. Supple tannins feel like suede-velvet and carry the elegant fruit and spice flavors into a finish that goes on and on.

I'm a huge fan of Post & Beam. These wines are from Far Niente in Napa Valley, whcih is an old, old producer that makes an estate wine which is really expensive. However, they've come out with some wines recently which are more consumer friendly -- broadening their customer base. These are in the $40-$50 range and are really delicious. I love when high-end producers come out with a wine which is a little bit less expensive because they're never going to put out an inferior product and it's always going to be the best possible wine which will drink above its price point -- simply because they don't know how to make bad wine. All they do is great wine, so I love Post & Beam.
