Whether you loved 2020 or found it to be trying and difficult at times, the start of a new year is worth noting and remarking upon! For your first month of 2021, we’ve chosen several trendy and tasty new wines from California! We’re hoping you’ll give them a try with the various food pairing recipes we have included and get back to us with what you thought! MONTHLY CLUB RED ONE WINERY NAME: Zoom Juice Wines Tasting Notes: A very expressive wine aromatically, with lychee, cranberry, raspberry, red cherries abounding with hints of cinnamon and clove. Flavors of pomegranate are accented by wisps of cedar. Winery Notes: Zoom Juice Wines is a new line of wines released by Summerland Wine Brands that’s dedicated to helping victims of Covid 19. A total of $6 from every case sold by the wine company will be donated to local food banks. Summerland is worked with its distribution and grocery chain partners to bring the wines to market this past Summer. The brand concept for Zoom Juice is staying socially connected and sharing during this new normal, according to Summerland Wine Brands, which is a California winery located in Buellton whose brands include: King Chancho, Flavor Bomb, Insomnia and its eponymous brand Summerland Winery. FOOD PAIRING Ingredients: Marinade: 1⁄2 cup chicken stock, 1⁄2 cup sake, 1⁄2 cup mirin, 1⁄2 cup soy sauce, 3 garlic cloves, 2 teaspoons grated fresh ginger, 2 tablespoons teriyaki sauce, 1⁄2 cup brown sugar Vegetables: Olive oil, 150g carrots, cut into match sticks, 250g thinly-sliced red cabbage, 400g Chinese cabbage, sliced thinly, 4 thinly-sliced green onions, 1 sliced chili pepper, 250g bean sprouts, 18g sachet miso, 2tablespoons mirin, 2 tablespoons sake, 1 tablespoon white sugar, 1⁄4 cup rice vinegar & 1 teaspoon soy sauce Instructions: Combine all marinade ingredients, cover, refrigerate several hours or overnight. Preheat oven to 180°C and remove duck breasts from marinade, reserve marinade. Cool duck breasts skin side down in a large fry pan until skin is browned and crispy and fat is rendered from skin. In an oven proof dish pour enough of the reserved marinade, so that the liquid will come about half way up each breast, discard the rest. Place duck breasts flesh side down in marinade and cook in oven for 20-25 minutes. Remove duck beasts and allow to rest for 5 minutes, slice thickly. If desired, skim off any excess fat from the surface of liquid, place pan over stove and mix a little water with some cornflour, add this to the marinade and thicken, serve as extra sauce with duck. For the Vegetables, combine miso, mirin, sake, sugar, vinegar and soy sauce in a saucepan and heat over a medium heat to dissolve sugar, remove from heat and set to one side. Heat oil in a wok or large frying pan, add all the vegetables and chili except the green onion, stir-fry 4-5 minutes until vegetables are just tender, you want them to still have a nice crunch. Add dressing and onion and stir until heated through. Serve vegetables topped with sliced duck & drizzle with extra sauce — and serve the rest on the side. MONTHLY CLUB RED TWO WINERY NAME: Dough Tasting Notes: On the nose is persistent dark fruit with undertones of brown sugar, cedar and tobacco. Flavors of expressiven black cherry, blackberry, plum, blueberry and licorice on the palate. A firm tannin entry opens to a broad mid-palate. Winery Notes: Dough is the first ever wine collaboration for the James Beard Foundation, and leading our winemaking is Heidi Bridenhagen, who has received over 200 90-point scores at MacRostie Winery. Heidi crafted the wines in concert with a diverse group of chefs and beverage professionals, all alumni of the Foundation’s Impact Programs, to create the most food-friendly wines possible. The North Coast AVA spans six winegrowing counties—including Sonoma, Napa and Mendocino—all influenced to a degree by the Pacific Ocean and offering a wide range of microclimates. For this release, the majority of Cabernet Sauvignon was grown in Sonoma County’s Alexander Valley, blending rich fruit from the valley floor with the intense color and flavor of high-elevation fruit. FOOD PAIRING Ingredients: Instructions: Preheat broiler. Mix cream cheese and garlic powder. Stir in bacon and green onion. Place mushrooms in an ungreased 15x10x1-in. pan, stem side up. Fill with cream cheese mixture. Broil 4-6 in. from heat until heated through, 4-6 minutes. MONTHLY CLUB WHITE ONE WINERY NAME: Dough Tasting Notes: Bright lemon citrus and honeysuckle floral notes on the nose with a hint of spice and a delicate richness to the nose flavors. Juicy fresh pineapple, nectarine and crisp Fuji apple to the taste. A touch of baking spice adds weight to the palate with a crisp and creamy finish. Fruit for this release comes from two exceptional coastal regions: Sonoma and Monterey Counties. Sonoma County vineyards are heavily influenced by lingering fog off the Pacific Ocean, drawn up the Russian River each day. Monterey County vineyards are adjacent to one of the largest underwater canyons in the world, sending brisk cooling winds off the deep, cold bay waters. Winery Notes: Dough is the foundation of bread, signifying new beginnings. Like making bread, thoughtful nurturing creates positive change that rises from the simplest of actions. We support the James Beard Foundation’s work to create an inclusive, equitable and sustainable food culture through an annual donation. The brand supports positive changes to the culinary arts and beverages professions. FOOD PAIRING Ingredients: WHY A CHEESEBOARD!? MONTHLY CLUB WHITE TWO WINERY NAME: Zoom Juice Tasting Notes: A complex but friendly wine with aromas of Asian pear, star fruit, and lemon citrus notes, with very subtle hints of fresh coconut flavors of lemon marmalade and a white floral component. Winery Notes: Zoom Juice reflects a need to connect with friends and family. Life can change the way we socialize, but it can never stop people from sharing, and that's what wine begs to be — shared. FOOD PAIRING Ingredients: Preparation: Step 1 Preheat oven broiler. Step 2 Mix together crabmeat, bread crumbs, parsley, salt and pepper. Step 3 Beat together egg, mayonnaise, hot sauce and mustard. Combine with other ingredients and mix well. Form into patties and place on a lightly greased broiler pan or baking sheet. Step 4 Broil for 10 to 15 minutes, until lightly brown. |
